Long Island duck was pan-seared to rare and served over stewed greens with a cherry demi-glace. There was a thin layer of fat on the duck breast, but it was nearly fork tender and ate like a pork tenderloin. It was mild in flavor and absorbed the cherry sauce well. The pairing of chard and other leafy greens was thoughtful and added an earthy complement. The lamb loin special at Noble Cellar in downtown Syracuse. He sliced it into four equal pieces and placed them over quinoa tabbouleh before topping them with green olives, sliced cherry tomatoes, shallots, capers and preserved lemon. It’s served with with soubise, a thick white sauce made with sweet onion. You don’t see a lot of restaurants serving lamb these days, and this is the most tender cut of the animal. I could’ve cut this with a fork, but I did use the provided steak knife, just to fit in. Typical fried chicken is bone-in, in this dish, boneless breast is dredged in flour, egg and buttermilk, and a second coating of flour, then fried golden. For an extra blast of flavor, it is served over a creamy, buttery blond gravy with smoky tasso ham with mashed potatoes. The maple-braised collards on the side were sweet and bitter, a fitting accent to this dish. From Jared Paventi: Though not a featured menu item, the Kabab Guys’ rice pilaf is served with every entrée. Don’t skip it. Sure, most rice sides are forgettable, but this is anything but. It’s a simple blend of rice, vermicelli noodles and warming spices, brought together with a rich stock, and the end result is a flavorful base that enhances every forkful of kebab or shawarma. This isn’t rice pilaf from a box, but a honest-to-goodness scratch made version that will change your opinion of the rote side. Since we visited the DeWitt location in February 2024, Kabab Guys opened a second spot in Fairmount. Togarashi-seared Mahi Mahi over sweet potato and wakame risotto at Brewer Union Cafe, Brewerton, N.Y. From Jared Paventi: Crowds flock to the gourmet diner in Brewerton for unique and flavorful takes on breakfast and award-winning burgers, but the secret is out on their dinner menu. This Mahi Mahi filet was crusted in a Japanese togarashi spice coating and seared on the grill. It was served over a wakame – the wrapper for sushi – and sweet potato risotto with a dusting of furikake, a Japanese blend of dried fish, sesame seed, salt, sugar and dried yuzu. This dish hit every base on the field in terms of flavor – earthy, sweet, sour, salt, acidic, umami – and every forkful was an adventure. The Hoosier Daddy at Brewer Union Cafe in Brewerton. I mean, where else can you get a meal tailer-made for an Indiana transplant? Owner Christian Felix pounds a 6-ounce slab of pork tenderloin for 10 minutes until it’s 1 foot wide and about a half-inch thick. He coats it with rice flour, panko and chips on its way to the fryer. Before this hubcap-sized cutlet can cool, he dumps a ladleful of his homemade white-pepper gravy full of breakfast sausage and smoked sausage. You choose how you want the two eggs that create the crown. Of course, the runnier the better. This feedbag set me back $18, but it weighed 3 pounds. So for $6 per pound, I got breakfast, dinner and a late-night snack for the day. (I slept through lunch.) It’s been 38 years since I moved here from Indiana, but this is the homestyle cooking I remember. We native Hoosiers put sausage gravy on pretty much anything and call it supper, mind you. From Jared Paventi: We eat a lot of awesome things on our visits, but an exception burger is the ace in the hole that trumps everything else. Our favorite from 2024 was a smashburger from Hobo’s 281 in Homer. Fresh-ground beef got maximum contact with the grill, leaving a crispy crust on the edges and the high fat-content of the meat gave it a creamy, rich flavor. It got the standard lettuce, tomato, onion and American cheese treatment, but letting the beef flavor stand assertively. Dinner at Get Smashed includes a fried onion burger, mac & cheese, macaroni salad and some pierogis. Pete Greene, the co-owner of this James Street diner on the easternmost edge of the city, just opened a ghost kitchen here with longtime friend Ryan MacCammon. The menu is simple: burgers made from wagyu beef grilled on the same flattop that’s fried thousands of 6-pound frittatas since 1940. Beef bibimbap from Ocean Sushi on Erie Boulevard. It’s finished with a fried sunny-side-up egg and served in hot stoneware. The Korean chef here seasons each vegetable separately when the order comes in before treating them with a sweet-spicy-savory sauce. When it arrives at the table, you poke the egg and mix everything together with your chopsticks. Wash the bibimbap down with a bowl of Haemul Sundubu. (That’s Korean for soft tofu seafood stew.) This is a spicy, seasoned stew made with silky soft tofu in a savory broth with mussels, shrimp, clams, squid and mixed vegetables. If you find your chopstick skills limiting, there’s no shame in reaching for a spoon and fork. You’ll likely save some time, and you’ll certainly eat more. From Jacob Pucci: It may not be the most colorful dish in an otherwise vibrant sampler served atop the large injera at this North Side restaurant, but the beef tibs might be the best. It’s simple — tender beef, herbs and spices, sweet caramelized onions and a whole lot of butter. The combo platters are still the way to go – just make sure the tibs is on there. Warren St., Syracuse From Jacob Pucci: I said at the time that this was the best veal parmesan in Central New York and nothing since then has knocked it from its post. It’s a one-pound, bone-in chop that could easily stand on its own, something that can’t be said for the thin cutlets usually used in this dish. The breading was light, and even with a blanket of tomato sauce and melted mozzarella cheese, stayed crispy. There’s a certain spectacle involved with serving a Frenched bone-in chop and while it is undoubtedly impressive, it’s right at home in Abbiocco’s mission of serving rustic Italian dishes with an artful touch. Fried beef with cumin, with sides of white rice, from Hometown Memory Szechuan Cuisine in Syracuse. Jacob Pucci Address: 124 Headson Drive, Syracuse From Jacob Pucci: I think of myself as a skilled cook, but there’s no way I could replicate this stir-fry at home, which is part of the beauty of this deceptively complex dish that I still dream about months later. The beef, shaved paper-thin, is stir-fried until deeply caramelized, yet still tender. The onions and bell peppers, kissed by an intense burst of heat, are lightly softenedon the outside and snappy on the inside. The whole cumin seeds, chilies and other spices are bloomed in hot oil to bring out their full flavor and the high heat caramelizes the sugar in the sauce, creating a delectable balance of sweet and savory. At one of my most unexpected gem restaurants of the year, this was the shining star. Cappa santa al prosciutto e basilico from Rosalie's Cucina in Skaneateles. Jacob Pucci Address: 841 W. Genesee St. Road, Skaneateles From Jacob Pucci: Just like the beef carpaccio, I’ve always had at least one person at my table order the Cappa Santa al Prosciutto e Basilico at Rosalie’s. This scallop dish has been on the menu seemingly since day one and it’s wonderful every time. The sea scallops – buttery, firm, yet tender – are always seared to a rich golden brown. The lemon butter sauce, never broken or greasy, always strikes the right note with the scallops, especially when paired with a salty bite of prosciutto. Even the angel hair pasta, of which I’m often a skeptic due to its propensity to overcooking, is always al dente and never a clump to be found. The Rosalie’s kitchen crew has this one down to a science, and it shows. House special banh mi from Vietnamese Noodle House in Camillus. Jacob Pucci Address: 801 Milton Ave., Camillus. Second location at 709 N. Main St., North Syracuse. From Jacob Pucci: Truthfully, I thought Ky Duyen had ruined all other banh mi in Central New York for me. But the house banh mi from Vietnamese Noodle House, which comes filled with pate, red-tinged roasted pork, a steamed pork sausage called Chả lụa and sliced grilled pork, along with the usual cucumber, fresh cilantro and the lightly pickled julienned carrots, gives the North Side shop a run for its money. Minnesota state agriculture officials reported multiple illnesses and found that a sample of the product tested positive for E. coli, which can cause life-threatening infections. Also included are nearly 63,000 Kia EV 6 vehicles from 2022 through 2024. The affiliated Korean automakers say in government documents that a transistor in a charging control unit can be damaged and stop charging the 12-volt battery. Dealers will inspect and replace the control unit and a fuse if needed. They also will update software. Emperor penguin released at sea 20 days after waddling onto Australian beach MELBOURNE, Australia (AP) — The only emperor penguin known to have swum from Antarctica to Australia has been released at sea 20 days after he waddled ashore on a popular tourist beach. The adult male was found on Nov. 1 on sand dunes in temperate southwest Australia about 2,200 miles north of the Antarctic coast. He was released Wednesday from a boat that traveled several hours from Western Australia state's most southerly city of Albany. His caregiver Carol Biddulph wasn't sure at first if the penguin would live. She said a mirror was important to his rehabilitation because they provide a sense of company.
